Physicochemical property
Black carrot color is soluble in water,aqueous, ethanol, propylene glycol and other polar solvent,insoluble in nonpolar solvent. It is stable under acidic conditions. Heat resistance and light resistance are good.
Applications: For drinks, ice cream, cakes, candies, jams, jellies, and wine etc.
