4. Properties: It occurs as colorless crystals or as a white crystalline powder. It is anhydrous or contains two of water of crystallization. One gram of the dihydrate dissolves in 1.5ml of water at 25℃ and in 0.6ml of boiling water. It is insoluble in alcohol.

6. Application: In food processing industry, it is used as buffer, chelate agent, stabilizer, antibiotic oxidizer, emulsifier, flavor regular. Used in dairy product jellies ,jam, meat, tinned, pastry. Used as emulsifier in cheese and used in citrus freshening. In phamaceutical, it is used for curing hypokalimia, potassium depletion and alkalization of urine.

8. Storage and transport: It should be stored in a ventilative and dry warehouse instead of in the open air, kept away from water, moisture and sunlight during transport, handled with care, so as to avoid damage to plastic bags. Furthermore, it should be stored separately from poisonous substances.
