It is an important natural preservative and food additive. is produced by fermentation of sugary substances such as granulated sugar, molasses, starch and grapes.
a natural occurring fruit and produced commercially by microbial fermentation of a carbohydrate substrate. is the most widely used organic and pH-control agent in foods, beverages, pharmaceuticals and technical applications. occurs as colourless crystals or as white, crystalline powder with a strongly acidic taste. It is very soluble in water,freely soluble in ethanol (96%) and sparingly soluble in ether.
Citrate anhydrous is used as acidity agent,flavoring agent and preservative in food industry,as raw material and flavoring agent in medical industry,as antioxidant,plasticizer,detergent in chemical,cosmetic and washing industries,as dyeing auxiliary in dye industry etc.
